He is a scientist who created WinBee and GwinBee based on TwinBee, and is a prominent figure on Donburi Island. He is a calm and gentle man, but most of all, he is a good friend to Light. He is also a good grandfather to Pastel and his family, staying up all night to make snow machines for his grandchildren and taking them on trips. Dr. Cinnamon enjoys drinking beer after taking a bath. Incidentally, when peace comes to Donburi Island, Dr. Cinnamon goes into a cold sleep and stays asleep until the next incident occurs. Professor Einstein J. Cinnamon, better known simply as Dr. Cinnamon (シナモン博士 Shinamon-hakase?), is a recurring support character in the TwinBee series. He is a genius scientist renown for being the inventor of the three heroic bumblebee androids: TwinBee, WinBee and GwinBee. He is the father of the two original pilots of the first game, Annamon and Donnamon, and is also Light, Pastel and Mint's grandfather.

Dr. Cinnamon has also made a prominent appearance in Konami's crossover Wai Wai series, where he is credited for the creation of the heroic androids Konami Man and Konami Lady.

He was voiced by the late Kazumi Tanaka.

Dr. Cinnamon is an eminent scientist and inventor from Donburi Island, where he spends most of his time inside his laboratory. Among his most notable achievements is, without any doubt, the creation of three bumblebee-shaped and self-aware android battle aircraft called TwinBee, WinBee and GwinBee. With these three ships, as well as a long list of trusty pilots to ride them, he founded the TwinBee Team, and all together have saved the island, as well as other threatened countries, in more than one occasion.

Cinnamon's current civil status is unknown. He is the father of Annamon and Donnamon, the first two pilots of TwinBee and WinBee, respectively, and which defended the island in 2801 aboard these two ships against the invading forces of King Spice. As time passed by, the honor of riding the TwinBee ships passed down to Annamon and Donnamon's children (and Cinnamon's grandchildren), Light, Pastel and Mint, while Cinnamon remained as the head of operations of the group.

An alternate continuity has Dr. Cinnamon living in Wai Wai World, where he also owns a huge laboratory. In this timeline, Cinnamon is the creator of the hero androids Konami Man and Konami Lady, and we're also introduced to his twin brother, Dr. Simon. He is a prominent support character in the two games from this long-running crossover series where he appears in, Konami Wai Wai World and Wai Wai World 2, where he once again commands the team and sends them to their missions.

In the anime, which expands on the universe established by the TwinBee PARADISE radio drama and related media, when not giving instructions to the team from his laboratory, Dr. Cinnamon can often be seen in company of his good old friend, Dr. Mardock, another eminent scientist and inventor; and likewise, both can often be seen teasing the irascible Dr. Warumon, with whom both have an uneasy friendship.

Once no further hostile threats could be seen over the horizon and realizing that the team was no longer needed for the time being, Cinnamon entered a cryogenic sleep of 100 years, waking up in 2901, where he once again took command of the TwinBee Team and whose new pilots were the offspring of the previous generations.

The plot of Moero TwinBee and its sequel, TwinBee 3, state that the new pilots, Squash, Whip and Mellow, are Cinnamon's great-grandchildren. Interestingly, the Detana!! TwinBee manga uses a very similar plot, having Cinnamon entering a cryogenic slumber and waking up in the future, although the year when he does so is undisclosed and the new pilots of this publication are completely different people: Beat, Chime and Shout. Due the the lack of a precise date where the latter production takes place, it's unclear if Cinnamon went through two cryogenic slumbers during the course of his life or if the manga reused the plot from Moero TwinBee and adapted it with new characters and events.

Dr. Cinnamon has the appearance of the stereotypical old scientist who is a bit out of touch from the rest of the world and instead spends most of his time inside his laboratory. He is bald on the top of his head but still has white and curly hair on the sides and back. He wears a pair of round spectacles that (probably due to their high level of augment) usually don't let his eyes be seen. But most notably, he fashions a thick and white mustache which can indifferently be seen a bit unkempt, or in later productions, well combed.

Along the many appearances Dr. Cinnamon has made –not only along the TwinBee series, but also in the Wai Wai crossover series– he has only gone through a few changes and redesigns, but overall he retains a very similar aspect throughout all of these productions. Originally, Cinnamon wore a white lab coat and most of the times he could be seen wearing slippers (although a very few times he could also be seen wearing shoes). This design would remain almost unchanged in all games from these two series.

In 1993, the TwinBee PARADISE universe became the prevalent style of the TwinBee series, first born as a radio drama and becoming visual for the first time with the arcade game Detana!! TwinBee. Nonetheless, Dr. Cinnamon wouldn't make a reappearance until the release of the 1994 Super Famicom game Pop'n TwinBee: Rainbow Bell Adventures. In this title, Dr. Cinnamon received his most important redesign, which is the one he's portrayed with in the various anime and the one he retains to this day. He now wears a yellow shirt, green tie, brown vest, green jacket, yellow pants and brown shoes (without wearing socks underneath). Additionally, his glasses are remarkably bigger. A precursory version of this design was actually first seen on the original Japanese cover of the Game Boy game TwinBee Da!! from 1990.

Dr. Cinnamon received an aesthetic overhaul for 1998's TwinBee RPG.

Dr. Cinnamon's last major redesign took place in the 1998 game TwinBee RPG, where he was given a more elaborated and tridimensional look. In this game, he wears a red Hawaiian shirt, his lab coat returns (although it's always unbuttoned this time around), and he has a notably chubbier complexion. Nevertheless, this design would only be used for this particular game and he was given back his TwinBee PARADISE look in following entries of the series.

  • TwinBee (1985 - arcade, FC, MSX): While neither physically appearing in the game nor in any artworks, Dr. Cinnamon is credited as being the inventor of the game's two protagonist fighter airships: TwinBee and WinBee, and for being the father of their two pilots, Annamon and Donnamon.
  • Moero TwinBee: Cinnamon-hakase o Sukue! (1986 - FC): Cinnamon plays a more prominent role in this game, where he's kidnapped by Gattlantis, the grandson of King Spice. This game actually takes place 100 years after the first one, and it's explained that Cinnamon survived all that time by being placed in cryogenic sleep. The manual is filled with artworks of him and the game's Japanese subtitle actually translates as "To the Rescue of Dr. Cinnamon!". Cinnamon's three great-grandchildren, Squash, Whip and Mellow, take control of the three bumblebee androids this time around to go rescue him.
    • Stinger: The plot was changed in the western localization of the game. While it's still retained that Cinnamon gets kidnapped, his abductors are instead an alien race known as the "Attackons", who want to steal his sweetener formula to transform the Earth into a giant ball of cotton candy.
  • TwinBee 3: Poko Poko Daimaō (1989 - FC): Dr. Cinnamon was living peacefully in Donburi Island accompanied by his three great-grandchildren. One day, while on an errand, GwinBee went missing and a voice then resounded on Cinnamon's laboratory introducing himself as the Demon King Poko Poko and admitting that he had kidnapped GwinBee. The doctor immediately sent off his other two great-grandchildren to board the remaining two fighter airships, TwinBee and WinBee, to go rescue him.
  • TwinBee Taisen Puzzle-Dama (1994 - PS): Dr. Cinnamon's role in this drop puzzle game is purely aesthetical. He appears at the center of the screen in all puzzle battle layouts and reacts accordingly and comically to the various attacks that take place between players.
  • TwinBee RPG (1998 - PS): Dr. Cinnamon is a good friend of Light and his cousins. He assists the protagonist by developing various helpful items. Depending on the protagonist's actions, he can mistakenly peep into the bathroom while Pastel is bathing.
  • TwinBee (2007 - pachislot): Once again, Dr. Cinnamon plays a merely aesthetical role in this slot machine game. He can often be seen in his laboratory with the rest of the TwinBee Team prior to the main battles. He sometimes also appears during other events to spice up the visuals.

  • Konami Wai Wai World (1988 - FC): Dr. Cinnamon once again takes a prominent support role in this first entry of Konami's long-running crossover series. Here we find him staying in Wai Wai World, where he has a laboratory as big as the one he has at Donburi. He is the creator of the two main protagonist androids of the game, Konami Man and Konami Lady, and we're also introduced to his twin brother, Dr. Simon, who has the ability to bring defeated characters back into action. Dr. Cinnamon is the team's chief of operations and he can often be seen debriefing the heroes during cutscenes.
  • Wai Wai World 2: SOS!! Parsley Castle (1991 - FC): One day, the evil space wizard Warūmon (unrelated to the TwinBee character) emerged from the darkness and conquered Wai Wai World. Dr. Cinnamon, who escaped the attack for being on a sightseeing trip, in response created a super robot named "Rickle" by using his secretly developed "Konami Hero Transformation Circuit" and sent him forth to stop Warūmon. After learning this, Warūmon retaliated by kidnapping the Herb Princess and escaped to his headquarters in outer space, known as the "Parsley Castle".
